Cold soup on a hot day

A very simple gazpacho made with a cucumber, two small sweet onions, two sweet yellow ananas tomatoes, salt, vinegar and water. I served it with an ice cube, a swirl of olive oil and a garnish of chopped red tomato and basil leaves.

It made a good start to lunch on a hot day. Chica Andaluza has several different recipes for this Andalucian speciality – please use the link to her blog in the sidebar because I don’t seem to be able to insert a link in this post.

  1. What a gorgeous soup that is! I am envious — here in the Pacific Northwest, our summer vegetables and berries are ripening a month later than usual, and we have yet to see consistent warm weather.
